Linseed oil miniemulsions stabilized by polyelectrolyte complex (gum arabic-chitosan)

An linseed oil miniemulsion was optimized using the microfludization process and finally stabilized by polyelectrolyte complexes formation. Emulsion preparation variables such as gum arabic/oil mass ratio (GA/O), oil volume fraction (), homogenization pressure and number of homogenization steps were optimized. The results show that microfluidization is an effective process to produce primary emulsions characterized by monomodal distributions with sizes between 440 and 720 nm and Z-potential values of 12.1 and 44.6 mV. Afterwards, a miniemulsion was selected and titrated with a chitosan solution to allow the complex formation. The droplet size and charge of the multilayer emulsion change with the increase of Ch concentration from 573 to 432 nm and -33 to +55 mV, respectively. A bridging flocculation process was observed in a GA:Ch mass ratio (RGA/Ch) of R5, because the net charge of the miniemulsion was close to zero. This study provides useful information on the formation of miniemulsion with droplet size, and charge specific which may improve the rate of lipid digestion.
